  • For the cakes
  • 115 g unsalted butter (plus more for greasing)
  • 170 g high-quality semi-sweet chocolate
  • 2 large eggs
  • 2 large egg yolks
  • 50 g granulated sugar
  • 2 tbsp all-purpose flour
  • 1 pinch of salt
Instructions
  1. Preparation

    Preheat your oven to 425°F (220°C). Grease four ramekins with butter and lightly dust with flour, tapping out any excess.

  2. Melt chocolate and butter

    In a double boiler or microwave, gently melt the chocolate and butter together until smooth. Allow to cool slightly.

  3. Whisk eggs and sugar

    In a separate bowl, whisk together the eggs, egg yolks, and sugar until thick and pale.

  4. Combine

    Fold the melted chocolate mixture into the egg mixture. Then, sift the flour and salt into the bowl and fold until just combined.

  5. Bake

    Divide the batter among the prepared ramekins and bake for 12-14 minutes, or until the edges are firm but the center is still soft.
